Taste and smell
It presents on the palate with a good balance of bitterness and spiciness. The nose releases an intense fruitiness with notes of artichoke, arugula, chicory and fresh herbs.

The olive tree is a centuries-old plant and is one of the oldest plants cultivated by man. There are many varieties of it in Italy and each type has its own well-defined characteristics.

Our oil is extracted from the Coratina Olive, botanically classified as Olea europea 'Coratina', is an Apulian cultivar, originating in Corato in the province of Bari, in the Apulian table.

This cultivar is robust with wide crowns, the olives develop in clusters, which is why in ancient times it was called in the Corato dialect “racioppe olive,” or racemi in reference to its peculiar quality of fruiting. One of the oldest and longest-lived cultivars, it has a great ability to adapt to stony soils, such as those of northern Bari and the Murgia and pre-Murgia area. Its great resistance allows us to grow olives without overdoing the use of pesticides and aggressive products, thus obtaining a product that, in addition to being natural and with exceptional qualities on the palate, is absolutely zero residue.

ORGANOLEPTIC CHARACTERISTICS
The extra virgin olive oil from the coratina cultivar has an intense fruitiness on the nose with hints of artichoke, chicory, arugula and fresh herbs, spicy and bitter on the palate. These are qualities that determine its excellence at the taste, organoleptic and health level, as the bitterness is due to the consistent presence of polyphenols. For these reasons, Coratina extra virgin olive oil is sought after and appreciated all over the world.
